Um dos principais problemas enfrentados no cultivo de café conilon (Coffea canephora Pierre ex A. Froehner) é a falta de mão de obra no campo. Parte significativa das lavouras no Estado do Espírito Santo está em áreas com topografia declivosa, o que dificulta o uso de máquinas agrícolas. A mecanização agrícola tem sido apontada como uma alternativa viável para garantir a viabilidade técnica e econômica do cultivo de café conilon em áreas aptas. Alguns estudos apontam o potencial de uso de novas tecnologias (agricultura de precisão) na melhoria do manejo da lavoura. O objetivo deste trabalho é apresentar novas tendências para o manejo mecanizado do cafeeiro conilon como alternativa para a melhoria de coeficientes técnicos e econômicos, tornando a atividade mais sustentável e competitiva.
One of the main problems facing the cultivation of conilon coffee (Coffea canephora Pierre ex A. Froehner) is local manpower shortage. A significant part of coffee plantations in the State of Espírito Santo, Brazil, is located in steep areas, where agricultural machines are difficult to be used. Agricultural mechanization has been pointed out as a viable alternative that can ensure the technical and economic viability of conilon coffee cultivation. Some studies reveal that the potential of the use of new technologies (precision agriculture) can improve coffee crop management. The objective of this article is to present new trends for mechanized management of conilon coffee as an alternative to the improvement of technical and economic coefficients, making the activity more sustainable and competitive. Microorganisms influence the sensory quality of the coffee beverage through the compounds degradation or release of metabolites that diffuse into the fruit. However, type and duration of fermentation can contribute to the growth and diversity of microorganisms. Thus, the objective of this study was to analyze the microbial and sensory profile of Arabica coffees under different fruit-processing conditions and fermentation by Saccharomyces cerevisiae. Coffee cherries were used in the dry fermentation and washed fermentation at 28°C. Fermentation time ranged from 36 to 288 hours. A panel of sensory attributes was evaluated by 9 Q-graders. Mid-infrared spectra were obtained in the wavenumber range from 4000 to 650 cm?1. Microbial analyses were performed by denaturing gradient gel electrophoresis. Total sensory score for fermented coffee was higher than for unfermented coffee. In 108 and 216 hours of fermentation, the total score was higher in washed fermentation than in dry fermentation, which also shows the influence of post-harvest processing and the removal of husk on the quality of fermented coffee. Balance and body were the sensory attributes that most contributed to group formation in dry fermentation. Thus, induced fermentation increases the sensory classification of coffee beverages with positive effects on chemical and sensory profiles. |
